Ramos Gin Fizz

This is one of my very favorite cocktails, which is a masterpiece when done correctly. It is also not an everyday drink, as it calls for heavy cream and shaking for 12 minutes (you actually don't need to shake it that long, but it does need some serious agitation so as not to separate). It looks like a sweet and frothy milkshake, but is actually a slightly tart and refreshing cocktail. Perfect for Spring (or any time, really).

  • 2 ounces gin (preferably a London dry style)
  • 1 ounce heavy cream
  • 1 egg white
  • 1/2 ounce lemon juice
  • 1/2 ounce lime juice
  • 2 teaspoons superfine sugar
  • 2 to 3 drops orange flower water
  • seltzer to top

Combine ingredients in a shaker with plenty of ice and shake until the shaker is to cold to hold. Strain into a collins glass (preferably chilled).

To sip a Ramos Fizz on a hot day is to step into a sepia-toned world peopled with slim, brown-eyed beauties who smell of magnolias and freshly laundered linen, and tall, mustachioed gentlemen who never seem to work and will kill you if you ask them why.
